Selecting Food-Grade Acidulants for Beverage and Food Production
Acidulants do more than make a product sour. They set the pH that governs preservation, drive flavour balance, influence colour stability and, in some systems, act as a chelating agent. Choosing between them is a question of matching the acid’s chemistry to the job, not simply picking the cheapest per kilogram.
What an acidulant actually does
- Preservation. Lowering pH into the range where spoilage organisms cannot multiply.
- Flavour. Each acid has a different taste profile and a different rate of perceived onset and decay.
- Buffering. Working with a salt of the same acid to hold a stable pH rather than just a low one.
- Chelation. Binding metal ions that would otherwise catalyse oxidation or colour change.
The common options compared
Citric acid
The workhorse. Highly soluble, mild and clean-tasting, available as anhydrous or monohydrate. Its mildness is an advantage in beverages and a limitation where a sharp, lingering sourness is wanted. It is also an effective chelating agent.
Lactic acid
Softer and slightly lactic in character, commonly used in dairy-type systems, bakery and some confectionery. Sold as a liquid (typically 80–88%) or as a powder. The liquid form is convenient for dosing but adds water to the formulation.
Tartaric acid
Sharper and faster to register on the palate, with a distinctive taste that suits grape-based and some fruit applications. Less soluble than citric acid and more expensive, so it is usually used as a blend component or where its specific taste is required.
Phosphoric acid
Cheap, strongly acidic and essentially tasteless beyond the sourness itself. Widely used in cola-type beverages. It is highly corrosive in concentrated form and needs appropriate dosing and storage equipment.
How to choose
- Set the target pH, then the taste. Two acids can reach the same pH with quite different sensory results.
- Check the buffering requirement. If the product must hold pH through shelf life, plan the acid/salt pair from the start.
- Match solubility to your process. Dry blending, syrup preparation and continuous dosing each favour different forms.
- Consider interaction with other ingredients. Protein, starch and some colours react differently to different acids.
- Confirm the grade and documentation. Food-grade with the monograph your market requires, plus a COA per batch.
Handling and storage in a tropical climate
- Store food-grade acids in sealed packaging on pallets, off the floor, away from alkalis and oxidisers.
- Citric acid monohydrate can cake in high humidity — rotate stock and avoid opening bags until needed.
- Keep liquid acids in corrosion-resistant tanks or drums with appropriate bunding.
- Respect the SDS: concentrated acids require eye and skin protection and adequate ventilation.
Specifying your order
State the acid, the grade, the form (anhydrous, monohydrate, or solution strength), the packaging format and the documents you need with the delivery. If a product is intended for export, confirm the labelling and documentation language at the quotation stage rather than at the port.
